Indian aromatic rice (Oryza sativa) is esteemed worldwide for its unique flavor, aroma, and superior grain quality. This review article comprehensively examines the physico-chemical properties of various Indian aromatic rice germplasm. Key properties such as grain size, shape, texture, amylose content, gelatinization temperature, and aromatic compounds are analyzed to understand their contribution to the distinct quality traits of these rice varieties. The insights gained from this review are crucial for breeding programs, quality improvement, and catering to consumer preferences.
