The global challenge of hunger is intensifying due to factors like climate change, inequality, and pandemics. Despite producing enough food to feed the population, 733 million people go hungry daily, with severe impacts in regions like Africa and South Asia. Hunger-related deaths reach 9 million annually, predominantly affecting children under five. In India, 43% of children suffer chronic undernourishment, with India ranked 111th on the 2023 Global Hunger Index. Sustainable consumption and food waste reduction are key to addressing this issue. One potential solution is utilizing banana peels, which are often discarded but are rich in nutrients such as antioxidants, fatty acids, carbohydrates, and minerals. Research indicates banana peels can be processed into flour with nutrient values comparable to cereals, making them a viable food resource. Proper processing can also reduce anti-nutrient components, making banana peel flour a promising option for addressing global hunger and improving food security.
