Sensory evaluation and nutritional analysis of value-added products jam, jelly and candy developed from star fruit and cape gooseberry

Abstract:

The study evaluates the quality of value-added products jam, jelly and candy developed from Star fruit and Cape gooseberry, carried out in the Nutrition Research Laboratory in the Department of Food, Nutrition and Public Health, Naini Agriculture Institute, Sam Higginbottom University of Agriculture, Technology and Sciences, Prayagraj, Uttar Pradesh. The sensory evaluation of the products by a panel of 5 judges the judges were requested to evaluates the fruits based preserved products with the help of a score card based on the 9- point Hedonic Scale (Color and Appearance, Consistency, Taste and Flavour and Overall Acceptability)
